My friends Katie, Larisa, and I all had a holiday baking night this past weekend. This post may not be the most interesting to read, but it was in fact one of the most exciting things of the past week. David has enjoyed all of the goodies. I made chocolate cheesecake twice last week and also came home from this baking night with delicious treats to share with him. We make sure to split everything evenly- we are like children. The other day we were sharing a pack of gushers and David made me put all the gushers in one group and we took turns taking colors one by one. 
We could not find a gingerbread man cookie cutter anywhere on this island! David was sweet and searched for one, but only came home with a bell, a Christmas tree, a star, and an angel. The gingerbread cookies turned out very "nice" (Caymanians say that food tastes "nice").
I love snowball cookies! They might not be the most flavorful out of the bunch, but they definitely give the look of winter.
Layer bars definitely bring back memories from Christmas with my family. My mom always made them. The photo does not do these justice. They were delicious and looked a lot cuter arranged on the cookie plates. 
Holiday sandwich cookies. These little sugar cookies melt in your mouth! The green frosted ones have a crumbly, shortbread cookie with a sugar frosted look. The nut topped ones are sugar cookies with a hint of Nutella. Katie has the recipe, so let me know if you are interested. They can be used for any occasion- pink frosting for Valentine's Day, orange for Halloween, etc. 
Larisa's truffles were delicious. They may not look that aesthetically pleasing on the wax paper, but when they were rolled in different toppings they added quite the touch to our little holiday platters.
The finished product! It was too bad that we ran out of cellophane, but we were still proud of ourselves for making over 25 plates to hand out to neighbors, coworkers, and friends from the branch.
Larisa was nice enough to let us cook in her kitchen. The smell of Christmas goodies, listening to Christmas music, and talking about different family traditions brought us all in the spirit of the season. It was a lot of fun!

Oh I'm going to be so sad this year to bake cookies without you. I think I'll have to do it all by myself while Davis watches the girls on some Saturday. I made my list and need 200 cookies -- about what YOU did for ME last year in MY kitchen. :) By the way, those plates looked beautiful and yummy too.

So sorry to hear your friends are leaving the island. You guys are so likable though - I know you'll make other great friends while you're down there.
