Happy (Belated) Cinco De Mayo

I love holidays and I love traditions. I see myself throwing a huge Cinco De Mayo party in the future. I would have The Mexican flag, colorful stenciled banners, and tissue flowers. I'd play a Telenovela in the background and serve David's favorite chicken enchiladas (email me for the recipe. It's the best one out there, I promise). If we were living somewhere far away from Utah or Arizona, I would make my mock Cafe Rio pork salad recipe and claim all the credit for how delicious it would taste. I'd have a traditional mariache band for part of the evening. Oh and I would invite my beloved Spanish teacher from high school (best class in the world, best teacher, and I love that she keeps in touch with her students- she even got me a wedding gift!)



So, in honor of Cinco De Mayo I'm going to blog about Mexican type things and also share a wonderful recipe with you all.

Favorite Mexican-type story:

My dad gets discounted, and sometimes free, Del Taco for life. This is how I found out:

One evening in my late teens my dad wanted to go to Del Taco. I came home after curfew and we headed over in the highlander. I was driving. When I pulled up to the window and I started ordering my dad leaned over and yelled, "Hey, is Julia (pronounce J with an H sound) working? Julia, can we come in?" At this point I was of course embarrased and reminded my dad that they were closed. Next thing that happened- Julia herself came to the back door and said, "Hey Elmo, come on in." They had opened the doors for us (after hours) and served us tons of free food. I was thinking to myself that we could afford to pay for a few tacos, but I kept my mouth shut. A couple weeks later I saw that Julia and several other Del Taco employees were in our front yard. My dad was giving them a TV of ours, some old suits for Julia's husband, our old trampoline for the kids, and a bunch of tubes for the Salt River (is that the name of the river that we would float down in AZ? Seriously, my memory is failing me with every passing day). I realized that he gets Del Taco for life because he generously gives them all of our "junk," but what looked to be treasures to them.

Favorite movie taken place in Mexico: Man on Fire. I love this film. David acquired an edited version somewhere, so all the gross blood and violence is taken away for our enjoyment. It's on TV quite often, so next time you notice that it is on you should definitely watch it.

Favorite Mexican restaurant: Tia Rosa's in Mesa. Second favorite is Mango's on Main St. I'm so jealous that some of my closest Mesa friends got together at Tia Rosa's recently not only because I miss them all, but because I have been craving a flying saucer for a few years now.

Favorite Mexican corn dip recipe: Do youreself a favor and make this dip. Your husband will love you and so will your branch/ward friends. I got the recipe from a friend that lived on my floor in the dorms and have used it several times since.

2 Cans Mexican corn (I have never really used Mexican corn, just the sweet whole kernels)
1 Cup sour cream
1 Cup mayo
1 Can diced green chilis (5 oz)
5 green onions, chopped (green part, not white)
2 Cups shredded cheddar cheese
3 T sugar
1 t chili powder

Serve with tortilla chips and Enjoy!

This year Cinco De Mayo was not very Mexican-y. I made tacos and the scrumptious chip dip for lunch, but dinner was far from traditional Mexican food. We had pizza from The Brick House (delicious) and visited with our visitors. It was fun having Camille and Kyle in town. She's my first internet/blogger friend that I met in real life and she is just as funny in person and is very nice! (her husband is also).

For my future Cinco De Mayo party I'll invite everyone who comments. :) Only kidding, I'll invite everyone that I love. Then I'll be offended if people don't show up. Oh and I hope that I'll have a Spanish style house by then with Spanish tiles in the kitchen and a little courtyard with an iron gate and a fountain with more Spanish tiles. And while I'm at it- I'll also be fluent in Spanish by then.

1. Thanks for the shout out! We had so much fun. Sorry I probably talked your ear off, though.

2. I never even THOUGHT of downloading that program. I might need to jump on that bandwagon, because my french is getting worse every day.

3. I would LOVE the chicken enchilada recipe---I've made them twice for Kyle, but he can't see how delicious they are, so if you say your recipe is the best, maybe it will change his perspective. (Also, at the risk of being like the one annoying Canadian, could you email me the yummy dessert recipe from Sunday night? I can't stop thinking about it. Thanks in advance, if the answer is yes!)

so i daydream every day about my future casita with spanish tile and high arches and everything spanish! I'm not sure if it's growing up in California or what, but I love it! Can we please throw a cinco de mayo party together next year?

For Nate's graduation I threw a fiesta and made Nate wear a sombrero. I wanted to make tissue paper flowers, but I ran out of time~ working full-time makes life so much more difficult :)

I love Mexican food, the colors in Mexico, speaking Spanish, and that same Spanish teacher (Senora Graf! the best), your party plans (I'll come) and this post.

I too love Mangos! OOh we found this awesome mexican restaurant in tempe called Casa de Reynoso, so whenever you're in AZ again, check it out. They actually have a little shop on val vista and southern, but the tempe one is way better!! And you're so cute with celebrating holidays

Em wanted soft tacos and had been planning on having them on Cinco De Mayo, so Mommy had it planned for a couple days. I was looking forward to them and also the fact that I didn't have to cook. When I found out that night that she was bringing home Del Taco, I have to admit I was a little disappointed. :) That story about Julia and Daddy is so funny! We need to write a memory book with all of Daddy's stories.
